What is Sushi Grade seafood?

I’ve continuously gotten questions about the requirements that make any fish ’sushi grade.’ I’ve also always tried to find a good answer. But as it turns out, there isn’t one. By that I mean, in the United States, there are no FDA rules for what makes seafood ’sushi grade.’ Basically, there is no such thing. The only thing that seems to matter is the basic procedures that will ensure the destruction of parasites. There is no mention whatsoever of any category of food that can be considered sushi grade. This basically leaves the decision up to the supplier as to which cuts they determine are sushi grade. So caveat emptor, and I suggest reading my ‘What is Sushi Grade Seafood‘ section of The Sushi FAQ for more information about this particular grade, if you will, of fish.

    Hi, Warren. Been a while…
    I moved to Seattle suburb from California.
    I’m getting a lot less sushi here, so I find myself making more sushi at home. Finding sushi grade fish is also hard. I have to go to a Japanese market in Seattle to get fish for sushi. I can’t really trust local Asian market or American market…

    That being said, there is a great Japanese restaurant in Seattle. The place is called Nishino. Their sushi is one of the best I have ever eaten.

    I see that you recommend Catalina Offshore… but I’m looking at their site and they only sell fresh salmon that is farm-raised.

    I know a lot of fish farms are actually pretty bad in that they create a lot of very concentrated pollution due to the large numbers of fish in one area AND they also make it easy for parasites to be transmitted since the fish are all kept in a tiny netted area.

    Is anything known about Catalina’s source of farm-raised salmon?

    I actually called and spoke to them about the farmed issue. They “Jeff” said that although it was farmed, it was still saltwater, coldwater etc. also the temperature that they freeze it down to (-40) kills any bad stuff. At any rate, i ordered somew and it was fantastic, the best I have ever had. They do get wild salmon there from time to time but its not always on the site, just call and ask them.
